Blueberry drying (reference drying process)

Blueberry dried also inherits the advantages of blueberries, which contain a large number of physiological active substances, known as fruits and vegetables "the first antioxidant ". Blueberry dried fruit can be dried by air heat pump dryer to remove excess water from fresh fruit and retain nutrients for longer preservation. Compared with fresh fruit, nutrition and taste are almost no different.

  1. selection: select mature fresh blueberry as raw material. Maturity to 8-9 appropriate.
  2. cleaning: pour blueberry into 3% sodium hydroxide solution to clean the surface wax, then clean with clean water.
  3. sugar immersion: soak blueberry with 30% sugar solution, then soak sugar with vacuum osmotic for 30 minutes, then soak sugar for 12 hours, drain sugar solution into pot, add dry sugar to heat dry sugar to dissolve. When the concentration of sugar solution reached 40-50, the sugar solution was poured into the fruit, soaked again for 24 hours, then soaked in 60-70% sugar solution for 24 hours, until the sugar content of the pulp reached 55-60%.
  4. elution: rinse the sugar solution on the blueberry surface and dry the surface moisture.
  5. drying and softening: the drying temperature of blueberry should not be set too high, the drying time of one cycle is about one day (24 hours-26 hours), and the water content of blueberry should be kept at about 12% after drying and softening.
  6. grading packaging: according to the quality grade requirements, packed in food bags and then packed in the corresponding cartons.

[3] Blueberry Drying Reference Process

First stage: the initial oven set temperature of 60℃, baking 2 hours;

After the first stage, the temperature is set at 40℃ and heated for 2 hours;

The third stage: repeat the first and second stage heating and cooling for baking, baking 8-10 hours, blueberry water content will drop to about 20-25%, waiting for blueberry cooling back to soft;

Fourth stage: after soft, carry on the second drying, the oven temperature sets 65℃, then bake for 12 hours, until the water content reaches about 12% can. Blueberry drying (reference drying process)
